Sooo..I quit my job last week. A job that I kept for 1 month. Not even actually, I was quite upset over this incident in the kitchen that I told my boss that I wanted to just go.
Maybe I’m just being a cry baby and a brat. I know it. All of us know it. But to be fair, it’s tough work and the tough me isn’t so tough and ready these days.
My colleagues and classmates have...

Dear Filipinos,
I know you’re mad at that American who lives in Cebu because of the things he said about the Philippines. However, aren’t you bothered by the same things?
-the dirty toilets
-the unnecessary plastic packaging (Kung SM pa yan, iba pa yung cashier at tagabalot, staple ng recibo at taga “signature”)
-the 10 second action from the security guards upon mall...

6 Qs that people ask when you're a balikbayan
Qs
1. May boyfriend ka na?
Madaming madami.
2. Nakita mo na si____(dati mong kasama palagi na “friend”? )
4. May trabaho ba dun...

Finally some dream fulfilling. I’ll get to watch one of my favorite bands!
I’m not a super fan of any band now. There was a time when I was crazy for The Moffatts and maybe Incubus. But that was a long, long time ago and I can’t say why I liked them.
Some songs I want to hear live:
Wonderwall-Oasis
Everlong-Foo Fighters
Blister in the Sun-Violent Femmes
Don’t Speak-No...

top chef
I’ve never gotten around to watching Top Chef before (hmm maybe just a few episodes here and there) because I thought it would affirm my greatest fears about being a chef. I’m watching the recently concluded All Stars series. DON’T TELL ME WHO WON OR I’LL BE FURIOUS. That’s anger right there. That’s just something I learned from the show hehe.
The guy who...
My absence from tumblr can only mean one thing: an absence of things to report. Well, there was my birthday…
Although it was nice because I got to spend it with friends and family, I’d rather not dwell on turning a quarter of a century old. There, I said it…let’s just get over it :)
So…I left the restaurant to attend to my studies. My boss and I had a lot of talks...

Squid Curry
“what’s for lunch?” is a commonly asked question early morning in the kitchen. Not the lunch on our menu but our staff lunch meal that we eat between shifts at 5 pm. Sometimes it’s pasta with dried up and brown herbs, sometimes it’s braised Asian cabbage, a lot of times it’s vegetarian curry. Our meal depends on what we need to get rid off in the cool room...

I can’t believe my head chef has a kid, a cute blonde baby whom he brought to the restaurant last week. He’s so…human.
I can’t imagine him coming home to a family. I always thought he just passed out on the couch with his chin to his chest and a scotch in his hand. The following questions come to mind: does he stand over his wife instructing her to open a carton of milk?...

To my friends,
I have about a week and a half of school holidays to go before classes resume. I don’t know what my schedule will look like next sem because I have 3 days of school and I’ve got two new rakets (Pang tennis). But busy is good and I am so happy! I’ll just switch on the scheduling/planning side of my brain and put it to...

Massugu Lite series - 180mm santoku
This “Lite” series of knives from Massugu feature a very special bevel that is flat on the left side and perfectly tapered on the right. The right hand side is then finished with a highly polished 1mm bevel. This is a modern incarnation of the edge found on wa gyuto or wa santoku and is usually only found on far more expensive...
I’m an oyster eater now. That’s one of the biggest changes I’ve seen in me (palette wise) since I’ve lived here. I wouldn’t go near those slimy suckers before but now I eat enough in class to essentially replace medical stimulants (lol). I also eat raw fish now. Oh the possibilities when the food is fresh!

I want to conquer today by way of Ferris Bueller but the rain is an enemy of mine. It picks days when I don’t have to go to school to hole me up in my room.
It didn’t win last Saturday night though because I still managed to go to that Blues and Jazz Festival. It was a sad site though because not everyone was as vigilant as me and there were only a few people grooving under clear...
we’ve been doing the methods of cooking in school like steaming, stewing, braising, baking, grilling. May food na talaga! hindi na ako napipilitang kainin yung carrot and orange slices na ginagayat ko :)) It’s been a hard two weeks though because the chef asks us to do 7 dishes a night and you have to work out the work flow yourself sometimes. My older classmate who was a primary...
