top chef

I’ve never gotten around to watching Top Chef before (hmm maybe just a few episodes here and there) because I thought it would affirm my greatest fears about being a chef. I’m watching the recently concluded All Stars series. DON’T TELL ME WHO WON OR I’LL BE FURIOUS. That’s anger right there. That’s just something I learned from the show hehe.

The guy who looks like a Filipino in the picture is actually Filipino. His favorite dish is “Braised oxtail with peanut sauce” or Kare-Kare. I finally know what the English translation of Kare-Kare is!

Some chef asked me what I liked to eat and I said…prawns. He said how would you cook it? I said “oh with garlic and salt and pepper”. He said “that’s it? That’s really…simple”(Excuse me Mr. Fancy Pants!). While I might eat half a kilo of that, I have to have a prepared answer that’s a bit more complex.

I know now that I like “braised oxtail with peanut sauce” and to quote Dale, “I’ve known nose to tail eating before it was even cool”.

Highlights: When deserving people win, great unpretentious food, new techniques that don’t involve foams

Low lights: when people make the same tired crudo;

Any time a contestant cuts their finger open and people say that they should “man up and continue working”. It’s okay if you’ve received medical care and won’t bleed all over the food. It’s another thing when you’re working with an open wound and there’s a possibility that you can make people (and yourself sick).

Same goes for people who are sick with the flu, diarrhea and other contagious diseases. In real life, I’ve seen people sent home to just rest because otherwise they’ll just sneeze all over the food. It’s not being weak or slack
